The best bounce will depend not only on the conditions you play, but also the type of swing you have (Digger or Sweeper).  Generally, when playing in different conditions, players can get away with mid bounces (50.08, 54.11, 60.07), but if the player is an extreme slider/sweep, when coming into the ball, then I would recommend lower bounces in all wedges (50.08, 54.08, 60.04).  If the player is a digger/driver, then more bounce will benefit the player (50.08, 54.14, 60.10).

I agree with Cameron. I have 50-08 bent to 51, 54-11 bent to 55 and 62-07. I had 60-07 and 64-07 but replaced them with the 62-07 because it works in a wider variety of conditions (although it is low bounce, the wide sole helps in soft lies and short deep soft bunker shots; just have to understand the distance limitation is about 55 yards for a full golf shot and 35 yd for a pitch). I constructed a 60-10 Snake Eyes 600W 3 years ago and that was fabulous out of wet sand and I could hit it off a tight lie using a digging shot. The conditions in San Diego County vary widely. I rotate the courses I play at.
